Does anyone remember what sunshine looks like? It’s been so long since we’ve seen it, we’ve actually forgotten. But if they grey, dreary weather is getting you down – fear not! You can inject eye-popping colour into your life with some delicious seasonal food that is guaranteed to brighten up even the gloomiest of days.
In fact, brightly-coloured fruit and vegetables won’t just liven up your plate, they can actually improve your health and overall wellbeing - and they more colourful they are, the more likely they will be packed with beneficial nutrients.
The best colours to go for? Red, orange, yellow, green, blue, indigo and violet (or all the colours of the rainbow).
And the best part is that most of these fresh, brightly hued foods need little adding to them to make a mouthwatering dish.
My favourite is something peppered with fresh green peas throughout, like this healthy and tasty Salmon and Pea Risotto
. Spinach is another nutritious powerhouse and is great in salad, like this Potato, Pine Nut and Spinach
For ruby red hues, we’ve already started picking up strawberries and eating them whole with a dash of sugar, but you can also get your red food kick with savoury recipes like this Tomato, Red Pepper and Red Kidney Bean
A colourful breakfast, lunch and dinner is sure-fire way to boost your mood during a rain (or hail or snow…)-filled day.
