One of life’s greatest pleasures is getting to eat something that tastes good but is also good for you. Thankfully in July, the mighty blueberry – bursting with antioxidants, Vitamin C and many more health benefits - comes into season.
This sweet and tangy fruit is a versatile and delicious addition to so many dishes. Whether you want to sprinkle in on your cereal or yogurt, bake it into a tart, pie or cake, or enjoy it in a jus for savoury dishes such as game, the uses for blueberries are truly endless.
In fact, I reckon most of us couldn’t keep a punnet in our fridge for more than a few days, given how moreish these little blue gems can be.
For some inspiration, why not try classic
Blueberry Pancakes, which are sure to satisfy even the pickiest of eaters.
For something more indulgent, this
Apple and Blueberry Cheesecake is a definite crowd-pleaser.
Or if you’re in the mood for a tasty beverage, why not give this
Blueberry Fizz cocktail a try?
Personally, I love adding blueberries to salads. To make my favourite recipe, start with a bed of fresh baby spinach, add blueberries, a handful of crumbled goat’s cheese, some honey roasted almonds, a few thin slices of red onion and dress with a red wine vinaigrette. For a heartier salad, add slices of chicken breast and you’ve got a filling version for lunch or dinner.
