Small plump, roundish beans which cook to a melting tenderness while still keeping their shape. Famously known as baked beans, they don't have a lot of flavour, but do absorb other flavours easily and are used in casseroles, cassoulets and soup recipes.
How to cook
Dried beans need to be soaked in cold water over night, drained and cooked in boiling water for about 35-40 minutes or until tender. It is essential to boil dried beans for the first 10 minutes of cooking to destroy toxic enzymes. They are easy and convenient to use in stews, soups and salad recipes.
