Crispy bacon salad
Combine 350g (12oz) cooked and halved new potatoes, with 1 x 50g pack of Make A Meal With Maple Bacon Rashers, cut into strips, 2 handfuls of baby spinach leaves, 2 tablespoons of olive oil and a generous squeeze of lemon juice. Season with a little salt and some freshly ground pepper and toss, before adding 150g (5oz) cooked beetroot, quartered, and a handful of fresh Parmesan shavings before serving.
