Slightly milder than onions, shallots have a hint of garlic flavour, making them a useful addition to many dishes.
Caramelised shallots are a great side dish for a roast. Peel and boil for 8-10 minutes, then sauté in a little butter and caster sugar until they're done.
Meet the grower
For around 20 years, Lincolnshire-based Kitchen Garden Produce has been supplying shallots to Tesco. Grower Chris Kitchen says shallots have a better concentration of flavour than onions, which is why most professional chefs prefer to use them in their restaurants. ‘They will just add that little extra something to your cooking,' says Chris. His top tip? Soak them in a bowl of hot water for 10 minutes and they'll be easier to peel.
