Preheat the oven to 180°C. Lightly butter a 900g loaf tin and line with baking paper.
Sift the flour and baking powder into a large bowl and stir in the sugar. Add the grated Goodness apple, Goodness sultanas and chopped Goodness pears, melted butter, vanilla extract, beaten egg and enough apple juice to make a dropping consistency. Add more apple juice if the mixture is too stiff.
Spoon into the prepared tin, scatter the surface with Demarara sugar and bake for 45-50 minute or until a skewer inserted into the middle of the loaf comes out clean. Remove from the oven and leave to cool in the tin for a few minutes before slicing.
This will keep for 3 days if it is cooled and wrapped well in foil.
