My children love pasta and this is a great way to add in veg to help towards their 5 a day. It uses store cupboard ingredients that can be varied depending on what veg the family like and what is to hand. Can be adapted to be veggie without the bacon.
Cook pasta according to packet instructions - approx 12 mins
In a large frying pan, heat the olive oil. Add chopped onions and cook for 5 mins until soft
Meanwhile, microwave green beans for 2 mins
Add chopped bacon to onions, cook until bacon is browned
Chop red pepper into either strips or small dice. add to bacon and onion mix
Add passata to bacon/onion/ red pepper mix. bring to boil then simmer
add chilli flakes to suit palate. Season with pinch each of salt and pepper
Add sliced mushrooms to passata/veg mix and cook for 5 mins
Add green beans to passata / veg mix
Drain pasta and add passata / veg mix sauce to it. Keep a little of pasta water to loosen mixture
Serve with grated parmesan cheese
Can omit bacon for veggie option
Can change veg to suit taste /seasons e.g. brocolli / asparagus / sweetcorn / green, yellow or orange peppers / courgettes etc
