Pre-heat oven to 400°F, 200°C, gas mark 6.
to Remove the centres of the apples with a corer, & make a cut round the middle of each. Then place the apples in a heatproof dish.
Mix chopped dates, sultanas, preserved ginger, coconut, brown sugar and lemon juice. Stuff the hole in each apple with the mixture. Place a small piece of the butter or margarine on each apple & pour the water around them.
Bake in a moderately hot oven for about 45 minutes, until the fruit is tender. Serve immediately.
