Cajun spiced pork with corn salad HERO

To make a marinade for the pork, combine the Cajun seasoning, olive oil and the lime juice in a bowl. Give everything a good stir until the mixture resembles a loose paste. Add the pork steaks and toss in the mixture until coated. Cover and chill until needed.

Heat a griddle pan over a high heat. Cook the pork for 4–5 minutes each side, or until cooked through.

To make the salad, put the sweetcorn, cherry tomatoes, coriander, red onion, extra-virgin olive oil and chilli powder in a bowl and toss to combine. Serve the sweetcorn salad with the hot pork steaks.
