Mix together the chicken and fajitas spice mix. Heat the oil in a large frying pan on a medium to high heat and add the chicken.
Stirring occasionally, cook for 4-5 minutes until the chicken is cooked through with no pink showing. Add the sliced onions and peppers and cook for a further 4-5 minutes. Meanwhile, follow heating instructions for the Uncle Ben’s Spicy Mexican Rice.
Spread warmed tortillas with salsa, sour cream and a couple of spoonfuls of chicken and vegetables, roll up and serve with the rice.
