Chicken, pea and ham risotto recipe

Pea and ham risotto (h)

Heat the olive oil in a medium sized saucepan, add the onion, celery and carrot and fry over a medium heat until softened but not coloured. Add the garlic and fry for another minute.

Stir in the risotto rice and stir for 1 minute over the heat. Then gradually add the hot stock a little at a time until it has all been absorbed and the rice is almost tender.

Stir in the Goodness roast chicken bites, Goodness sliced ham and peas and warm through for 1-2 minutes. Scatter with grated parmesan to serve.

  • 1tbsp olive oil
  • 1 small onion, finely chopped
  • 1 stick celery, finely chopped
  • 1 carrot, peeled, finely chopped or grated
  • 2 garlic cloves, finely chopped
  • 100g risotto rice or basmati
  • 500ml fresh chicken stock, hot or low salt chicken stock
  • 70g Goodness roast chicken bites

  • 100g frozen peas
