Bring the stock, sesame oil and rice wine vinegar to the boil in a fondue pot or casserole dish set over a moderate heat. Reduce the heat to low and keep warm.

Thread the beef, mushrooms and ginger onto wooden skewers and cook in the warm stock until cooked. Garnish with coriander leaves.
