Tip the tomatoes into a bowl with the red onion slivers and chopped chilli. Pour over the lime juice and olive oil, then gently stir in the sugar, parsley and basil. Season with a little salt and pepper to taste.

Goes well with barbecued meats, chicken and fish, or with tortilla chips as an appetizer.

  • 1 rounded tbsp flat leaf parsley
  • 2tbsp chopped basil
