  • Preheat the oven to Gas 6, 200C, fan 180C
  •  
  • Peel and cut potatoes into chunks. Place in a pan of boiling salted water and  boil until soft (approx 20 mins).
  • Drain the potatoes and mash with half the butter and milk. Set aside.
  • Whilst potatoes are boiling, gently fry chopped onions in remaining half ofthe butter until transparent and soft.
  • Add the corned beef and mixed herbs stir well to combine.
  • Remove from heat and mix into mashed potatoes.
  • Transfer into shallow ovenproof dish approx 20 x 30cm. A dish with a larger surface area ensures that there will be enough crunchy topping for everyone!
  • Place in the oven, and cook until brown and crunchy.
  • Heat the baked beans.
  • Serve together, piping hot. For a little extra, add some cheese to the baked beans, although this is entirely optional!
