Eglish scones with jam and cream

Rub butter into flour until it resemble find breadcrumbs.

Add in salt. sugar and the milk to form a soft dough. Roll out the dought to1.5 cm thickness. Cut the scone out with a flutted 3cm. diameter cutter.

Put the sconeson a greased baking tin. Brush with beaten egg yolk. Bake in the oven for 10-15 minutes at 230C/450F /Gas 8.

Remove the scones from the oven. Cool on the wire rack.

When cool split the scones and sandwich with butter, jam and clotted cream.

II is best to eat teh cones on the same day
