Preheat the grill to hot.
Thread the diced lamb and prunes onto the wooden skewers, alternating between the two as you thread them on. Brush the lamb with the olive oil and season the brochettes. Grill for 8-10 minutes, turning occasionally to ensure even cooking.
Remove from the grill when the lamb is cooked. Arrange on serving plates and garnish with the chicory leaves before serving.
