Was anaemic as a child, so plenty of liver for iron, and 25 years + on I have inherited my mums love for cooking nice fresh hearty meals that discuses vegetables. I work with adults with disabilities and got out my old hand wrote recipe book to teach them to cook healthy meals and found this one of their favourites. Success for fussy eaters! yay! Even If you don‘t like liver, give this recipe a try. :)

Toss the liver in flour to coat. Heat a large frying pan and put oil in it Brown the liver, bacon, onions and carrots in the oil in a frying pan. Put all ingredients into a casserole dish. Add the stock, oxo cubes & boiling water Add the tomatoes Add the herbs. Cook on medium for 45 minutes or more on 170*c (The longer and slower it cooks, the better the flavour ) Serve with potatoes or mixed Vegetables.

The longer and slower it cooks, the better the flavour I also sometimes add dumplings about 10 minutes before the end of cooking. Adjust water content to taste depending if you like your sauce thick or not. Also as a more hearty meal pre boil cubed potatoes and add to casserole dish.
