Mix the all the ingredients in a bowl. Mould into patties, and then fry, grill, oven bake or barbecue.

Serve in rolls with salad, sour cream and guacamole.

  • 1 onion, finely chopped
  • 1 pepper, diced
  • 2 cloves garlic, crushed
  • 100g cheese, grated
  • 1tbsp fresh thyme leaves
  • 1/2 tsp chili powder (hot or mild, depending how spicy you like your burgers)
  • pinch dried chili flakes (add a little more for a real kick)
  • zest of 1 lime
  • 1 tsp dried oregano
  • generous pinch (1/4tsp) ground cumin
  • salt, to taste
  • pepper, to taste
