Pre-heat the grill to hot. Heat a grill pan over a moderate-high heat until hot.
Brush the pork chops with half of the oil, then season well. Brush the griddle pan with a little of the remaining olive oil then cook the pork chops on the pan for 12-15 minutes, turning once halfway through cooking until lightly charred on both sides and cooked through in the middle.
Meanwhile, arrange the strips of pepper on a baking tray and drizzle with the remaining olive oil. Season and grill for 8-10 minutes until lightly charred. Remove from the grill once ready. Use a sharp knife to cut each pork chop horizontally into three.
Stack the peppers and pork chop pieces alternately in a stack on serving plates. Garnish the plate with thyme sprigs and thyme leaves before serving.
*This recipe is very indulgent so shouldn't be eaten too often, but it's perfect for those special occasions!
