Thinly slice the red onion, the mango and the chilli. Place in a large salad bowl along with the rest of the ingredients.

Make the dressing by whisking the olive oil, lime juice and honey together. Pour the dressing over the salad and serve with warm crusty bread.

  • 1 bag mixed salad leaves
  • 200g mango
  • 50g pomegranate
  • 1/2 mild chilli
  • handful of fresh mint
  • handful coriander leaves
  • 3tbsp virgin olive oil
  • 1tbsp lime juice
  • 1tsp honey
