Heat the oil in a wok or large frying pan and stir-fry the chilli, spring onions and sugar snap peas, for 2-3 minutes.

Add the prawns, Uncle Ben’s Egg Fried Rice, water and continue stir-frying for another 3-4 minutes or until heated through.

Serve with a wedge of lemon squeezed over if desired.
