Butterbean dip

Ingredients

  • 1 large tin (400g) of butter beans, drained and rinsed
  • 8tbsp of low-fat fromage frais
  • 8tsp of lemon juice
  • 2 fat cloves of garlic, peeled
  • 19 black olives
  • 2tbsp of chopped parsley

Each serving contains 115 calories, 2.8g sugar, 1.9g fat, 0.3g saturates and 1.3g salt.

Method

Whizz the butter beans, fromage frais, lemon juice, garlic, olives and parsely in a blender or food processor. Add a little water if the mixture is too dry, until you get a light, fluffy spread. Spoon the butterbean dip into a serving bowl. Serve immediately or cover and chill in the refrigerator until required.

Eat with raw vegetable crudités, crackers, breadsticks or tortilla chips.
