Courgette and ricotta herb pasta

- 3 courgettes, sliced
- 350g penne pasta
- extra virgin olive oil
- 2 cloves garlic, chopped
- 1 lemon, zested
- bunch of basil
- bunch of mint
- 150g ricotta cheese
