Paleo Fudge (Wheat/Gluten/Dairy Free)

Ingredients

  • 1/2 cup Peanut or Almond Butter
  • 1/2 cup Creamed Coconut
  • 1/2 cup Unsweetened Cocoa
  • 1/4 cup Set Honey
  • 1 tsp Vanilla Extract
  • 1/2 tsp Sea Salt
  • 1/2 - 1 cup Extra Goodies (e.g. you can add nuts or dried fruit)

Method

Microwave the set honey and creamed coconut for 30 seconds or so, to melt it.

Combine all ingredients in a food processor until mixed well.

Press & flatten the mix into a block, within a flexible freezer safe container (I used a plastic tray from a microwave ready meal, perfect size).

Place it in the freezer for around half an hour, until the mixture is firm.

Remove from the freezer, pop out of the container, and cut into squares, ready for munching. Store in the fridge.

I like to add some hazelnuts or walnuts (as per the picture). You can also try substituting some of the cocoa powder for carob powder for a lovely rich flavour.
