Pumpkin puree
Ingredients
- 1 large pumpkin, peeled, de-seeded and diced
- 30g unsalted butter
Method
Bring a large saucepan of water to the boil and cook the pumpkin until soft; 15-20 minutes usually. Drain and reserve a little of the cooking liquor. Puree in a food processor with the butter until smooth. Transfer to a storage jar, cover tightly and chill. Serve warm or cold.
