Spicy Spanish Meatballs
Ingredients
- 2 onion (chopped)
- 300g mnced beef
- 1 teasp chopped oregano
- 1/2 teasp cumin ground
- 1 beaten egg
- 1 chopped red chilli
- 1 tabsp oilve oil
- 2 clove chopped garlic
- 175ml beef stock
- 400g tinned chopped tomato
- 1 tabsp Tomato purée
- 1/2 chopped red pepper
- 1/2 chopped green pepper
- 1 tabsp chopped chives
Method
Combine the onion and beef in a mixing bowl. Add the breadcrumbs, oregano, cumin and ½ teaspoon each of salt and pepper and mix well.
Add the egg and mix thoroughly. Roll the mixture into balls about 4cm in diameter.
Heat the oil in a frying pan, add the meatballs and fry for 5 minutes, turning occasionally, until browned. Set aside.
Finely chop the chilli. Heat the oil in a pan. Fry onion, chill and red pepper and garlic. Add in stock, tomatoes, tomato puree, and salt and pepper .Bring to the boil and simmer for 5 minutes.
Add the meatballs to the sauce and simmer for 10 minutes to heat through. Serve with freshly cooked pasta. Sprinkle with chopped chives .
Herbs like basil and rosemary can be added for extra flavour.
