Thai soya bean salad
Ingredients
- 100g frozen soya beans (or peas)
- ½ cucumber, cut into sticks
- 100g bean sprouts
- 1 small red grapefruit, peeled and segmented
- 1 apple, cored and sliced
- handful fresh coriander leaves
- 50g Tesco Wholefoods soya nuts
- For the dressing
- 1tbsp tamarind paste
- 1 bird's eye chilli, finely chopped
- 1 clove garlic, crushed
- juice of 1 lime
Each serving contains 78 calories, 5g sugar, 2.9g fat, 0.4g saturates and 0g salt.
Method
Boil the soya beans (or peas) in water for 2-3 minutes then drain and cool. Mix with the other vegetables, fruit and coriander. Sprinkle over the soya nuts.
Mix the dressing ingredients together and drizzle over just before serving.
