Thai soya bean salad

Ingredients

  • 100g frozen soya beans (or peas)
  • ½ cucumber, cut into sticks
  • 100g bean sprouts
  • 1 small red grapefruit, peeled and segmented
  • 1 apple, cored and sliced
  • handful fresh coriander leaves
  • 50g Tesco Wholefoods soya nuts
  • For the dressing
  • 1tbsp tamarind paste
  • 1 bird's eye chilli, finely chopped
  • 1 clove garlic, crushed
  • juice of 1 lime

Each serving contains 78 calories, 5g sugar, 2.9g fat, 0.4g saturates and 0g salt.

Method

Boil the soya beans (or peas) in water for 2-3 minutes then drain and cool. Mix with the other vegetables, fruit and coriander. Sprinkle over the soya nuts.

Mix the dressing ingredients together and drizzle over just before serving.
