Watermelon cooler

Ingredients

  • 190g prepared watermelon
  • 6 mint leaves
  • a squeeze of lemon or lime juice
  • 2 shots gin (optional)
  • 200ml ginger ale

Each serving contains 55 calories, 12.1g sugar, 0.3g fat, 0.1g saturates and 0g salt.

Method

Place the watermelon and seeds in a food processor with the mint and lemon and gin (if using) blend until smooth.

Chill in a thermos flask until required until required.

To serve, divide between two glasses and dilute with the ginger ale.
