Oven bake or microwave cook the jacket potatoes. Heat the oil in a large nonstick fry the spring onions and peppers for 3-4 minutes until softened. Stir in the Quorn mince.
Add the Worcestershire sauce, tomatoes, sweeetcorn, stock and seasoning. Reduce the heat and simmer for a further 10 minutes. When cooked, cut the cooked potatoes in half lengthways leaving two halves slightly attached, open them out flat and transfer to a nonstick baking tray.
Spoon over the Quorn mince and sprinkle over the grated cheese, return to the grill and heat until the cheese melts. Serve with a crisp salad.
