Roasted figs with cinnamon and orange

Preheat the oven to Gas 4, 180°C, fan160°C. Cut the figs in half and place in a shallow roasting dish.
Dot the figs with butter and sprinkle with demerara sugar and cinnamon.

Pare off a strip of orange rind and add to the dish. Squeeze the juice from the orange. Pour over figs.

Scrape the seeds from the vanilla pod and put to one side. Nestle the vanilla pod in with the figs. Bake them for 15 minutes until tender.

Tip
You could mix a few of the vanilla seeds and 1-2 teaspoons icing sugar into 200ml (7fl oz) crème fraiche and chill it. This is delicious served with the hot figs.
