Preheat the oven to 180°C.
Remove the skin from the sausages and add to large mixing bowl. Grate 1 onion and carrots and add to mixing bowl. Add 2tbsp relish and combine all ingredients together.
Roll out pastry into large rectangle - approx 30cm by 20cm. Place rolled out pastry onto baking sheet.
Put sausage mixture along the pastry leaving a gap top and botton of 2cm and width 6cm.
Cut strips in overhang of pastry and wrap sausage mixture up to form a plait and enclosing the sausage mixture.
Brush with beaten egg all over pastry.
Bake for 30 minutes or until golden all over. Serve with potatoes and vegetables or baked beans.
Tip: Sprinkle with sesame or poppy seeds over egg wash pastry before you bake in oven.
