Place the strawberries and water in a heavy-based saucepan. Bring to a simmer over a medium heat, then cover and cook over a low heat for 15 minutes. Remove from the heat and mash with a potato masher until smooth. Return to the heat for 5 minutes, cooking the puree strawberries uncovered.
Leave to cool, and serve when ready.
