Mix together the spareribs and hoisin sauce and leave to marinate for 1 hour or more.
Heat oven to Gas 4, 180ºC, 350ºF. Place the ribs in a large roasting pan, cook for 20 minutes, turn and cook for a further 20 minutes.
Heat oil in a large pan, gently cook the garlic and ginger on a low heat.
Cook the noodles according to the packet instructions.
Cut the pak choi in half lengthways and add to the ginger. Add the drained noodles, spring onions and lime juice and toss well, cooking for 5 minutes. Serve the noodles with the spareribs.
