Crush the blackberries in a bowl with a fork, whisk in the oil and vinegar and leave to stand for 20 minutes to infuse.
Push bramble mix through a sieve with the back of a spoon and season with salt and pepper.
Shred the leftover turkey into bite size pieces and mix with the orange segments and the Lasting Leaf Sweet & Crunchy salad leaves. Mix the bramble dressing through the salad mixture and place into serving dish. To finish sprinkle the salad with the parsnip crisps.
You could replace the turkey with chicken, pheasant or grouse a great way to use up leftovers.
