Start by heating the vegetable oil in a large frying pan on a medium heat. Then roughly chop the onion, the garlic and sauté until they turn soft and translucent and then season with a little salt and pepper. Allow to cook gently for about 3 minutes.
Next add the beans and tinned tomatoes and let simmer for 5 to 6 minutes until the beans soften and juices reduce down a little.
Cut two large slices of bread and place onto a baking tray and grill both sides until golden brown. Or place bread into a toaster.
Cut the fresh cherry tomatoes into quarters and add to the pan and stir in. Turn off the pan and allow the fresh tomatoes to warm through for about 2-3 minutes.
Take the slices of bread and cut into bite size croutons about 2cm square. Serve the beans in a deep bowl and add about 5 of the croutons per serving. Finally add a few leaves of basil and a drizzle of malt vinegar to taste.
