Preheat the oven to 200°C. Heat the olive oil in a large saucepan, add the onion and fry for 2-3 minutes or until softened. Add the peppers and courgettes and fry for another 2 minutes or until softened.

Stir in the cherry tomatoes, Goodness chicken bites, Goodness tomato pasta sauce and crème fraiche and warm through for 2 minutes. Tip into a 20cm x 30cm ovenproof dish and dot with teaspoonfuls of mascarpone.

Scatter with the Goodness tortilla crumbs and bake for 15-20 minutes or until warmed through.
