mix the eggs and the soya cream in a deep bowl. Set this aside while preparing the bread.
roll out the bread slices so they are flat, then use a cookie cutter to cut a circle of bread from each slice
dip each bread circle into the egg mix and leave to soak for 1-2 minutes to allow the bread to soften.
remove each circle of eggy bread from the mix and place into individual shallow yorkshire pudding moulds or into ramekin dishes
chop the veggie bacon strips into small squares and place an equal amount into each eggy bread crust.
add the salt and pepper to the egg mix, add the grated cheese, then pour the mix onto the bacon.
bake in a medium over for around 25 - 30 minutes or until the eggy mix has risen and the top has turned light brown
These make a scrummy picnic food, they are easy to handle and eat without knives and forks and they are even more scrummy if dipped into tomato ketchup for eating!
