Heat the oven to Gas 5, 190°C, 375°F. Beat the butter and sugar together until soft and a pale, creamy colour. Gradually beat in the egg. Mix in the flour, making a smooth dough.
Lightly dust work surface with flour and quickly roll out dough. Press out dove shapes, place on a baking sheet and cook for 8-10 minutes until golden at the edges. Carefully lift off with a palette knife and cool on a wire rack.
Put the icing sugar in a bowl and add just enough hot water to mix the icing to a stiff consistency. Spoon the icing on to the biscuits and smooth out. Leave to harden.
