zesty roasted veg

Preheat the oven to gas 6, 200°C, fan 180°C. Toss the veg with the oil, orange juice and zest. Season to taste and arrange in a roasting tin.

Roast for 35 to 40 minutes, turning over the vegetables halfway through cooking.
