Fresh homemade custard makes every dessert so special. It’s a real classic and it’s very easy.
You start by pouring 150mls of milk and the same amount of double cream into a pan. Then get the heat on.
How to flavour your fresh custard with vanilla
The delicious flavour of this custard comes from using a vanilla pod. Just cut down it length ways. Then, using the side of the knife or the spoon, scrape down the inside to get the seeds out. Pop the seeds and the pod into the milk and cream and stir them through.
When this comes to scolding point, which is when you start to see little bubbles, take it off the heat and let it infuse.
Adding sugar and eggs to your custard
Meanwhile add 3 tablespoons of golden caster sugar to 3 egg yolks and whisk them together. Keep going until they’re pale and frothy.
Scoop the vanilla pod out of the milk and cream and pour it into the eggs and sugar. Then whisk it. Then tip the whole lot back into the pan and get the heat on really low.
How to work out when your fresh custard is ready
Now just stir the custard constantly with a wooden spoon. Just be patient, it’s done when it coats the back of the spoon. And that’s it, fantastic fresh vanilla scented custard.
