Video guide to chargilled fresh pepper
Hi, I'm Marcus and I'm going to show you how to chargrill peppers.
We've got a beautiful selection of peppers here today, some spicy, some sweet. I'm going to use the bell pepper. A good way of checking a good pepper is just making sure that it's nice and firm to the touch and a little bit heavy to the hand. The skin can be a little bit tough, so what we're going to do is we're going to remove that skin.
An easy way to char a pepper
I'm just going to light the hob and we're going to put this on the hob and chargrill it. Making sure you grab some tongs before you pop this on the hob. Just be careful because this is a naked flame.
You'll need to keep rotating that pepper so you get a nice even char on all of the skin. You should get a lovely popping sound with the skin just starting to blister up and starting to char.
So now we've got a lovely charred colour on our pepper. We grab a resealable bag, turn off our hob and we're just going to pop this pepper inside the bag. What that's going to do is just, once we've sealed that up, it's going to allow the pepper to sweat and that's going to help remove that skin.
How to skin a pepper
I've got one that's been sitting here for a few minutes, which I'm going to now remove. Now what I've got is I've got a bowl of water here and that's going to help us get that skin off. So I'm just going to pop the pepper inside and just with my thumb, I'm just going to push that skin off there and you can see it just falls away. It doesn't matter, you don't have to remove every little bit of the char because some of that's going to add some flavour.
So just keep removing all of that skin, give a little rinse. What I'm now going to do is to take that, pop that on the board, grab my knife and I'm just going to remove some of that flesh.
How to serve your chargrill pepper strips
What we're going to do is we're going to cut that into strips. A couple of suggestions for these strips, you could pop them onto a home-made pizza, run them through a nice bit of pasta. What I'm going to do is get a lovely salad, just of some leaves and also some nice red onion and I'm just going to sprinkle my strips of pepper over there and just add a little bit of olive oil.
