How to poach an egg
There are a lot of myths about how to poach an egg, but here's a way to get great results every time.
Use fresh eggs
First add a splash of white wine vinegar to a wide shallow pan of simmering water. Just gently drop the egg into the water from a ramekin. A cup would be fine for this too. The secret is to use really fresh eggs. The fresher they are, the more the whites stay together.
Gently does it
Let the eggs simmer really gently until the white is set. It takes about 2 minutes. Then carefully lift it out of the water with a slotted spoon. Check with your finger that the
white is firm. Then just drain the egg on the kitchen paper and it's ready to eat.
What to have it with
Delicious in a salad, as eggs Benedict with hollandaise or just by itself on toast it's absolutely unbeatable.
