JC: Whatever you do always make sure you keep your meat at least half an hour to three quarters of an hour before you serve it, to allow the juice to come down and also the meat to mellow in such a way.
Now you can see I’ve got this amazing, beautiful roasted turkey. And simply cover it up with some foil and perhaps give one or two little holes for the steam to come off. That means that you still have the crunch on the skin and it’s not going to get cold so easily.
