January can be quite a bleak month with dark mornings, cold weather and no exciting event like Christmas to look forward to. It can also be a month when we’re trying to pinch the pennies a bit more. But although this might sound gloomy it doesn’t mean you have to eat uninspiring food!
Cooking on a budget can be delicious and you can often end up with leftovers so one meal does two sittings! For a simple week night supper we love a Penne Pasta Bake. Simple to throw together and very comforting it’s perfect for January nights in front of the telly. Alternatively you could make a Fish Stew for a healthy dinner that will feed a family of four easily. Serve it with some crusty bread to mop up all the delicious juices.
Don’t forget lunch! A frittata made on a Sunday night can do lunches all week so it saves you money every single day. We like this one with oven roasted root veg but you can get creative and pop whatever you like in yours!
If you’re dieting this January you might be off the puds but if you are having a little of what you fancy nothing is more delicious than a bowl full of crumble. A classic Apple Crumble won’t break the bank and is a great way to indulge a little this January.
