May is a wonderful month for delicious, fresh flavours as there are so many fantastic ingredients in season. Three that are at their best right now are: Jersey Royals, salmon and spinach.
Jersey Royals are a variety of potato grown in the rich, fertile soil of Jersey in the Channel Isles. They are great simply boiled and tossed through a salad like our Jersey Royal Rainbow Salad recipe. Or you can roast them with some vegetables like our Warm Jersey Royal and Red Pepper Salad and serve them alongside grilled meat or fish. They also go very well with oily fish such as trout.
Salmon is one of the most popular fish in the UK as it is also incredibly versatile. Serve it up in one of the more traditional ways with our Smoked Salmon Blinis recipe (we've also got a great Gluten-Free version) for a timeless canapé or try a Salmon and Asparagus Fagita for something a bit different. It is also delicious prepared in the simplest of ways like our Tray Baked Salmon. Simply pop everything on a baking tray and leave.
Packed with iron and a super food, spinach is a spring favourite that can be used in many different ways. Petit Pois with Spinach and Shallots is a vibrant and fresh side dish for lamb or meatier fish. Alternatively, whip up a batch of Spinach and Filo Tarts that are perfect as a dinner party starter or taken out on a picnic.
