As the nights draw in and a slight chill fills the air, we all tend to reach for comfort food: delicious, hearty dishes to fill us up and keep us warm.
There are many reasons why people love autumn, but for the Tesco Real Food team one of the best things about the next few months is the vegetables. Now is the time for pumpkin, butternut squash, globe artichokes, swede and beetroot. Their deep, vibrant colours are as beautiful as autumn leaves, and they’re wonderfully versatile to cook with, too.
Try Butternut Squash and Sage Bake for a warming family dish, or spice things up a little with coconut milk and tofu to make a delicious Winter Vegetable Laksa.
Winter vegetables also work beautifully in soups, whether you’re looking for something with a sense of occasion, such as Beetroot and Horseradish Soup, or the perfect partner for a crusty loaf at lunchtime - try Cream of Pumpkin and Honey. Not only are they affordable, fantastically quick and easy to make, but they’re just the thing to set you up for a windswept autumn walk, too!
