May 23rd - May 27th is National Vegetarian Week and a great excuse to whip up some delicious vegetarian recipes. Whether you need a lunchbox filler, a quick mid-week supper or something a bit special for a weekend dinner party we've got some fantastic recipes to get your mouth watering.
Cheese, Pepper and Courgette Pie is a delicious and filling lunch, serve it alongside a simple green salad. Or if you would rather have a lighter lunch Beetroot and Feta Salad or Pea and Mint Soup are fresh and healthy ways to rejuvenate a tired lunchbox.
During the week we all want simple, tasty meals that are easy to prepare. Our Quick Cauliflower and Olive Tagine recipe is a great vegetarian alternative to the traditional lamb or chicken tagine and is packed full of flavour. For a touch of spice try our Vegetable Curry or whip up some Vegetable Bolognese for a veggie version of a staple family supper.
