Although Christmas is a magical time for most of the family, it can be a stressful time for those doing all the cooking. To prevent a meltdown over the festive season pop some fail safe crowd pleasers in the freezer so you’ll always have a meal to hand!
Firstly have a couple of one-pot dishes stowed away that you can defrost at a moments notice for a quick dinner. Our Quick Fish Pie is a simple dish that everyone will love. All you’ll need to do is defrost and boil some green beans to serve it with. You could also whip up a batch of Prawn Curry and have some rice and naan breads on hand for a meal everyone can help themselves to with minimum fuss.
Make Christmas day that little bit easier by making parts of it ahead of time. You can prep and freeze some Roasted Garlic Gravy and Bread Sauce for up to a month before hand. It might also be a good idea to have a side dish or two on standby to go with any leftovers. King Edward Boulangere potatoes are an ideal accompaniment to leftover turkey, ham or salads and make leftovers into a full blown meal.
If you have plans in the afternoon and need a speedy lunch (or are still full from the night before and need something light!) freeze a batch of Beetroot Soup with Horseradish that you can simply ladle into bowls and serve with crusty bread before dashing out to enjoy the festive fun!
Ever been caught out by unexpected visitors? During the festivities people are always popping in to say hello or wish you a merry Christmas and it’s nice to offer them a little something. Freeze some Speedy Sausage Rolls to warm up if they pop in for a glass of wine and have some Hazelnut Biscotti tucked away if their timing is more appropriate for coffee.
And there you have it, Christmas catering made easy!
