Nothing is nicer than the thought of a summer holiday. Long, warm days spent lounging by the pool or on the beach without a care in the world. Maybe you'll have an ice-cold cocktail in hand and a really great book to get through. Maybe you'll doze off in the middle of the day or maybe you'll finally get up the courage to swim without a rubber ring. Whatever happens it's a time to relax and let loose and what better way to do that than to eat some fantastic food.
Summer holiday food is all about fresh, simple ingredients put together quickly and easily. Nothing's better than the smell of a coal barbecue or picking up ingredients whilst planning what to do with them later.
Pollo Al Mattone is a perfect example of simple food. Just pop it in a baking dish with all the glorious fresh ingredients like lemons and rosemary and your work is done leaving you more time for a cool glass of rose in the evening sun. Serve it up with an effortless Lamb's Lettuce Salad for a delicious meal that involves few ingredients.
If your holiday isn't complete without a barbecue (they're practically a requirement!) then whip up a feast with Halloumi Kebabs, Spicy Sardines with Lemon and Parsley and of course burgers (try Cumin Burgers for something a bit different). Serve them up with a Courgette and Tomato Gratin to complement the Mediterranean flavours.
If you're not stuffed after all that amazing food then roast some pineapple on the hot coals and serve it up with lime, chilli and ginger for a clean end to the meal.
