These are potato slices fried in oil. Homemade potato chips baked in the oven are healthier and safer to cook than deep fried.
Best for chips
King Edwards, Maris Piper, Rooster, Sante or Sweet potatoes make the best.
How to cook
Scrub well (peel if liked), then cut into thick finger size sticks. To cook, heat 2-3 tbsp sunflower oil in a hot oven about 200°c/180°c fan/Gas 6 for 5 minutes. Add the chips and toss well to coat. Return to the oven and cook for 45 minutes, turning once during cooking until they are golden and crisp. Season to taste. Sprinkle with curry powder, Mexican fajita seasoning or a little paprika before roasting. They are great served with chargrilled chicken.
